I applaud your effort to make the watchface very configurable. However, fewer items simultaneously in the display that are readable would be more practical.
The real time preview without having to Save inspires me to implement the same in my own watchfaces. Kudos to you.

Glad the real time preview is helpful for you! To do it, I built a reusable React framework for hosted config pages – feel free to grab it from Github if you’d like to give it a try for your watchfaces!
Without enabling Uniform Font Size and Larger Font Sizes, the top and bottom lines are nearly impossible to read on Pebble Time Steel without reading glasses, and looking carefully. That’s with the watch resting on a desk. On my wrist would be entirely impossible.
I added the larger options to ensure readability, but they come at the tradeoff of less space for content, unfortunately!
The grayed out top and bottom text is difficult enough to read without being grayed out. Consider not graying that text out.
Feel free to adjust the color! The theme builder is designed to let you change any color on the watchface, including the secondary widget text color!
When enabling Temperature, Imperial, Uniform Font Size, and Large Font Sizes, the temperature displayed is wider than the area for it to be displayed.
On the Time 2 and Round 2, it does fit with all those options enabled! You’re right that it ends up too wide for the Time Steel though – perhaps I can adjust the defaults to remove the parenthesis, which would fit:
